I will have to say that 10 days flew by fast. A few of us were a little shaky on Memorial Day with all of the festivities but everyone managed and we all lost weight. Maximum weight loss was 12 pounds and minimum was 2 pounds. It was a great way to get back to being completely unprocessed. It truly is 10 days of whole plant foods and 10 days of potatoes and vegetables was actually not too bad! Who doesn’t love potatoes???? We did get creative with our potato toppings. My favorite would have to be the stuffed cabbage soup topping I made in my instant pot. I left out the rice because I was on the potato boot camp but it was still delicious over potatoes! This soup would be great on the rice boot camp as well!
Stuffed Cabbage Soup Recipe
I made this in my instant pot but you could do it in a soup pot on the stove!
1 medium head of cabbage chopped
1 cup onion chopped
1 cup celery chopped
2 15oz cans of tomato sauce
4 cans of water (use the tomato sauce cans)
2 15oz cans sauerkraut (drained and rinsed)
1 TBSP brown sugar
1 cup cooked brown rice (optional)
Put all ingredients in instant pot or other electric pressure cooker and cook for 15 minutes at high pressure. After natural release stir in the cup of cooked brown rice if using.
Eat as a soup or topping for baked or mashed potatoes!
If cooking on the stove top in a soup pot, add all ingredients except rice and cook until cabbage is tender. Add rice at the end.

When are you doing this again? I missed the start of this one. I would like to try cleaning up our diet. I know I’m not prepared to go full vegan. Of course this might be because I’m not sure what it is to eat a vegan diet. What I do know is food plays such a big roll in our everyday health.
