Oatmeal Muffins. Breakfast to go! 

Oatmeal is the best breakfast you can have!  Sometimes you need a grab and go meal.  These oatmeal muffins are the ticket!  I added some vegan mini chocolate chips but you could also add blueberries or raisins for sweetness.  I did not add the optional 1/2 cup sugar so mine are not very sweet.  They are delicious with a little all fruit spread!  Give them a try.  Pack one in your kiddos lunch box!

Note: you are going to make a flax egg.  To do this take 1 tablespoon of ground flax and add it to 3 tablespoons of warm water.  Do this first and let it sit in your wet ingredients bowl while you are getting your dry ingredients together.

silicone muffin pan and preheat oven to 350

Dry ingredients:

1 cup plain quick oats

1 cup whole wheat pastry flour

2 teaspoons baking powder

1/2 cup sugar or sweetener of your choice (optional for a sweeter muffin)

Pinch of salt

Wet Ingredients:

1 cup of plant milk (I use pacific brand oat milk)

1 flax egg (see note above)

1/4 cup applesauce or baby-food prunes

2 Tablespoons of natural peanut butter (ground peanuts only)

1/4 cup mini vegan chocolate chips (also optional)

Mix wet and dry until just combined.  Do not over mix.  Divide into 6 muffin tins and bake at 350 for 25 minutes.  Test with a toothpick… if it comes out clean they are done.
