Rotel Rice 

This rice is simple and delicious.  I use jasmine rice because it is my favorite.  Ro-tel is a name brand of canned chopped tomatoes with green chilies added.  Most stores have a generic and that is fine also.  The tomatoes usually come in mild, medium or hot.  I have used all.  The hot is really spicy but goes great when I add this rice to bean burritos.  This rice recipe is baked in the oven and the edges get a little crispy…YUM.  It is a great base for a bowl topped with black beans and veggies.  Add some chopped cilantro to the top for a more Mexican flare!

You will need a 13 by 9 glass oven baking dish and preheat your oven to 350

2 cups jasmine rice (or rice of your choice, cooking time may vary)

2 1/4 cup water

1 can of tomatoes/chilies juice and all (I used Ro-tel) 

1 /2 teaspoon of salt (optional for you who are s.o.s. free)

stir to combine and cover tightly with foil.  Bake for 45 minutes.  Taste test to see if the rice is cooked to your liking.  If too firm… just pop it back in the oven for a few minutes.

It has come out perfect for me several times.
